Sliced apples tossed with sugar and cinnamon, baked between two layers of buttery pastry until the filling bubbles through the vents.

Ingredients

For the pastry

  • 300 g all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 225 g cold butter, cubed
  • 75 ml ice water

For the filling

  • 1000 g apples, peeled and sliced, a mix of tart and sweet
  • 150 g sugar
  • 2 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp lemon juice

To finish

  • 1 egg, beaten, for the wash
  • 1 tbsp sugar, for sprinkling

Instructions

    Cold butter and a short rest are what create flaky layers in the crust -- warm dough bakes up dense.

    Slicing warm pie lets the filling run out -- letting it cool lets the juices set.

Notes

  • A mix of tart apples (Granny Smith) and sweeter ones (Honeycrisp) gives the best balance of flavor and texture.
  • Cover the edges with foil partway through baking if they brown too quickly.
