Greek Village Salad (Horiatiki)
Crisp vegetables and briny feta tossed in a simple oregano vinaigrette.

Tomatoes, cucumber, olives, and a thick slab of feta tossed with red onion and a sharp oregano dressing -- no lettuce, and none needed.
Ingredients
- 4 ripe tomatoes, cut into wedges
- 1 cucumber, sliced
- 1 green bell pepper, sliced
- 1/2 red onion, thinly sliced
- 150 g Kalamata olives
- 200 g feta, in a slab or cubed
For the dressing
- 4 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp dried oregano
- salt and pepper to taste

A slab of feta left whole on top, drizzled with oil and oregano, is the traditional presentation -- crumbling it is common but not classic.
Notes
- Salt the tomatoes lightly and let them sit a few minutes first if they need extra flavor.
- This salad does not keep well once dressed -- dress only what you'll eat that sitting.
