Tomatoes, cucumber, olives, and a thick slab of feta tossed with red onion and a sharp oregano dressing -- no lettuce, and none needed.

Ingredients

  • 4 ripe tomatoes, cut into wedges
  • 1 cucumber, sliced
  • 1 green bell pepper, sliced
  • 1/2 red onion, thinly sliced
  • 150 g Kalamata olives
  • 200 g feta, in a slab or cubed

For the dressing

  • 4 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • salt and pepper to taste

Instructions

  1. A slab of feta left whole on top, drizzled with oil and oregano, is the traditional presentation -- crumbling it is common but not classic.

Notes

  • Salt the tomatoes lightly and let them sit a few minutes first if they need extra flavor.
  • This salad does not keep well once dressed -- dress only what you'll eat that sitting.
