Beef Stroganoff
Seared beef and mushrooms in a creamy paprika-flecked sauce, over noodles.

Strips of beef seared hot and fast, then simmered briefly with mushrooms, onion, and a sour cream sauce -- classic comfort food over buttered egg noodles.
Ingredients
- 500 g beef sirloin, thinly sliced against the grain
- 2 tbsp vegetable oil
- 1 onion, thinly sliced
- 250 g mushrooms, sliced
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 350 ml beef stock
- 1 tbsp Dijon mustard
- 120 g sour cream
- salt and black pepper to taste
To serve
- 400 g egg noodles, cooked
- fresh parsley, chopped

Boiling after the sour cream goes in can make the sauce split.
Notes
- Named after the Stroganov family in 19th-century Russia -- the original recipe was already this simple: beef, sour cream, and mustard.
- Creme fraiche makes a slightly less tangy sauce than sour cream, if you prefer.
- Leftovers keep 2 days refrigerated but reheat gently to avoid splitting the sauce.
