Strips of beef seared hot and fast, then simmered briefly with mushrooms, onion, and a sour cream sauce -- classic comfort food over buttered egg noodles.

Ingredients

  • 500 g beef sirloin, thinly sliced against the grain
  • 2 tbsp vegetable oil
  • 1 onion, thinly sliced
  • 250 g mushrooms, sliced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 350 ml beef stock
  • 1 tbsp Dijon mustard
  • 120 g sour cream
  • salt and black pepper to taste

To serve

  • 400 g egg noodles, cooked
  • fresh parsley, chopped

Instructions

  1. Crowding the pan steams the beef instead of browning it -- work in batches.

  2. 8 min
  3. 5 min
  4. Boiling after the sour cream goes in can make the sauce split.

Notes

  • Named after the Stroganov family in 19th-century Russia -- the original recipe was already this simple: beef, sour cream, and mustard.
  • Creme fraiche makes a slightly less tangy sauce than sour cream, if you prefer.
  • Leftovers keep 2 days refrigerated but reheat gently to avoid splitting the sauce.
