Liège Waffles (Gaufres de Liège)

A yeasted, pearl-sugar dough waffle with a crackly caramelized crust -- the real Belgian waffle.

A rich, brioche-like yeasted dough studded with Belgian pearl sugar, proofed rather than whisked, then pressed in a hot iron until the sugar caramelizes into a crisp, crackly shell -- nothing like the thin batter-and-syrup waffle sold under the same name.

Ingredients

  • 500 g bread flour
  • 7 g instant yeast
  • 120 ml milk, lukewarm
  • 2 eggs
  • 1 tsp salt
  • 60 g sugar
  • 1 tsp vanilla extract
  • 250 g butter, softened

To fold in

  • 200 g Belgian pearl sugar (sucre perlé), do not substitute granulated sugar

To serve

  • powdered sugar, optional -- no syrup needed

    This is closer to a brioche dough than a pancake batter -- the long knead with butter worked in gradually is what develops the chew Liège waffles are known for.

  4. Real Belgian pearl sugar doesn't melt at waffle-iron temperatures the way granulated sugar does -- that's what gives Liège waffles their crackly, caramelized crust. Granulated sugar dissolves into the dough instead and won't caramelize the same way.

    Watch rather than time this one -- irons vary, and the color of the caramelized sugar is the real signal, not the clock.

Notes

  • Liège waffles are a yeasted, pearl-sugar dough, not a batter -- the light, rectangular, deep-pocketed "Brussels waffle" is a different, separate Belgian waffle, traditionally eaten with syrup or toppings the way this one isn't.
  • Pearl sugar is sold as "Belgian pearl sugar" or "sucre perlé" at specialty grocers and online -- there's no substitute that gives the same crackly crust.
  • The dough can be made a day ahead: refrigerate it after the first rise, then shape, fold in the pearl sugar, and proof it cold-to-room-temperature the next day.
