A basic buttermilk batter whisked together in one bowl and cooked in batches until golden -- the weekend breakfast that needs no special equipment.

Ingredients

  • 300 g all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Wet ingredients

  • 480 ml buttermilk
  • 2 eggs
  • 60 g butter, melted and cooled
  • 1 tsp vanilla extract

To finish

  • butter, for the pan
  • maple syrup, to serve

Instructions

  1. A few lumps are fine -- overmixing is what makes pancakes tough instead of fluffy.

Notes

  • Batter keeps refrigerated for 1 day -- expect it to thicken slightly overnight.
  • Stir in blueberries or chocolate chips just before cooking, if using.
