Fresh egg pasta layered with a true ragù alla bolognese -- soffritto, beef and pork, white wine, and milk, simmered for hours -- and besciamella, with no ricotta and no mozzarella; just Parmigiano-Reggiano, the way Bologna makes it.

Ingredients

For the ragu alla bolognese

  • 2 tbsp butter, or olive oil
  • 1 onion, very finely diced
  • 1 carrot, very finely diced
  • 1 celery stalk, very finely diced
  • 100 g pancetta, finely diced
  • 300 g ground beef
  • 200 g ground pork
  • 120 ml dry white wine
  • 300 ml whole milk
  • 2 tbsp tomato paste
  • 400 ml beef or chicken stock, plus more as needed
  • salt and black pepper to taste

For the besciamella

  • 50 g butter
  • 50 g all-purpose flour
  • 600 ml milk
  • pinch of nutmeg
  • salt to taste

To assemble

  • 12 fresh egg lasagna sheets, dried lasagna, cooked per package directions, is a fair substitute
  • 100 g Parmigiano-Reggiano, finely grated

Instructions

    This soffritto is the flavor base of the whole ragu -- rushing it with high heat browns the vegetables instead of softening them, and the ragu never quite tastes right afterward.

    Adding milk before the tomato is traditional in Bologna -- it tenderizes the meat and rounds out the tomato's acidity, which is why this ragu tastes rounder than a tomato-forward Sunday sauce.

    A true ragu alla bolognese simmers for at least two hours, sometimes three or four -- there is no shortcut to the flavor this builds.

    Slicing straight from the oven collapses the layers -- resting lets the lasagna set.

Notes

  • No ricotta and no mozzarella -- a proper lasagne alla bolognese is built from just ragu, besciamella, fresh pasta, and Parmigiano-Reggiano. Both are common in Italian-American versions, but neither is traditional to Emilia-Romagna.
  • Assembled, unbaked lasagna freezes well for up to 3 months -- thaw overnight before baking.
  • Leftovers keep 3 days refrigerated and reheat well covered in a low oven.
